Chicken Dish For 2 In Under 30 Minutes

The Boy recently made a really tasty chicken dish.  It was fast and easy and tasted great.  I thought I'd share the recipe and a picture of the outcome. 

Yes, The Boy made dinner with very minimal help from me.  He's become quite the chef lately! 

We based our recipe on the one posted on recipezaar.com.

Ingredients

2 boneless skinless chicken breast halves
flour
salt and pepper
2 teaspoons of extra virgin olive oil
1/2 can chicken broth
2-3 cloves minced garlic
1/2 tablespoon butter

Directions

Pound chicken breasts. 
Lightly cover with flour, salt, and pepper. 
Fry in oil using electric skillet for 5 minutes on each side.
Remove chicken, set aside, and cover with foil.
Add broth and garlic to skillet.
Let simmer for 2 minutes.
Put chicken back in the skillet and pour sauce over chicken.

Side Dishes

Green beans. We just grabbed a bag of frozen beans and heated them up on the stove in 1/2 cup of water for a few minutes.

White Rice.1 cup of dry white rice, 2 cups water.  Makes 2 cups cooked.
